Baked salt encrusted red snapper |
I tried making salt encrusted baked fish and was quite happy with how it turned out. The red snapper turned out moist and seasoned just right. I marinated the fish in
calamansi juice (Citrofortunella microcarpa or Philippine lime), salt, and pepper and stuffed the belly with a mixture of minced garlic, chopped onions, dried oregano, and paprika. I then made a dipping sauce of
calamansi, soy sauce, and spiced vinegar.
