Yellowfin tuna collars might be considered as throwaway cuts in some places but I can say it is one of the best tasting parts that you can put on a grill. In the Philippines, grilled tuna collar or inihaw na panga ng tuna is considered as one of the traditional sumsuman (Hiligaynon) or pulutan (Tagalog), or food that you consume while drinking alcohol. It is also great with steamed rice. It is usually served with a dipping sauce made from calamansi juice and soy sauce (sometimes with crushed chilies for an extra kick).
